Frozen Sweet Corn Recipes

As we all know, sweet corn is a very healthy and valuable vegetable. It contains different types of vitamin B complexes such as niacin and folate, dietary fibres and potassium. A lot of people think frozen sweet corn has preservatives and additives. In fact, nothing is actually added to frozen sweet corn. They are just frozen soon after harvesting.

There are numerous ways to cook with sweet corn all over the world. Here is however one of the most popular recipe we can share. Here is how to make cheesy corn casserole.

The ingredients that you will need are:

  •  4 slices of chicken bacon
  •  ½ stick of butter
  • ½ cup flour
  • 3 cups milk
  • 4 cloves garlic
  • ½ a block of cream cheese
  • 2 ounces Velveeta
  • 2 cups shredded cheddar cheese
  • 3 bags frozen corn
  • Salt to taste
  • Pepper to taste
  • Paprika to taste

Directions:

  • Take 4 slices of chicken bacon and chop it into small pieces.
  • Chop your butter into small cubes
  • Measure out your wheat flour.
  • Measure your milk. We recommend using full cream for enhanced taste but you can use low-fat, almond or even soy. Stay away from coconut milk.
  • Peel your cloves of garlic and chop it finely.
  • Chop your chilled cream cheese into blocks.
  • Chop your Velveeta into small cubes.
  • Shred your cheddar cheese, or use pre shredded cheddar cheese.
  • Using a deep pot, fry your chicken bacon using very little oil or butter until it has turned brown and crispy.
  •  Add in your butter and garlic. Sauté for about 60 seconds, just until you get the fragrant smell.
  •  Chuck in your wheat flour and stir continuously for about 2 minutes. Just cook out the raw flour taste, do not let it turn brown.
  •  Pour in milk. Whisk constantly using a whisker and bring it to a boil. Simmer until the batter has thickened by reducing the heat. If you are able to coat the back of the spoon with the sauce, you know it is done.
  •  Once it is thickened, turn off the heat and add the shredded cheddar cheese and cream cheese cubes. Stir until well incorporated. Add salt and pepper to taste. Add a little paprika if you want to.
  •  Add your frozen sweet corn
  •  Spread the mixture in a well greased baking dish and bake at 180* Celsius for 46 minutes to an hour depending on your oven type. Just make sure it is bubbly and only very lightly browned on top.
  •  Once taken out from oven, let it cool off a bit and voila! Homemade cheesy corn casserole all done.
